Ingredients

For the meatballs

  • 1 pound ground beef or lamb Choose according to preference
  • 1/4 cup breadcrumbs Can use gluten-free alternative
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Can substitute with fresh herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

For assembly

  • 2 cups cooked quinoa or rice Base of the bowl
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Olive oil for drizzling
  • Tzatziki sauce for serving

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, oregano, salt, pepper, and parsley. Mix well and form into meatballs.
  • Place meatballs on a baking sheet and drizzle with olive oil.

Cooking

  • Bake meatballs for 20-25 minutes until cooked through.

Assembly

  • In bowls, layer quinoa or rice, then top with meatballs, cherry tomatoes, cucumber, red onion, and feta cheese.
  • Drizzle with olive oil and serve with tzatziki sauce on the side.

Notes

For the best presentation, serve in a large dish for customization. Pair with a green salad or roasted vegetables. Store leftovers separately in airtight containers; meatballs last 3-4 days in fridge or can be frozen for up to three months.
