Ingredients

Cookie Dough

  • 75 g Unsalted butter (Room temperature)
  • 200 g Granulated sugar
  • 1 tsp Vanilla extract
  • 1 Egg (Room temperature)
  • 120 g Greek yogurt (Creamy full-fat yogurt) Use at room temperature
  • 185 g All-purpose flour Sifted
  • 1 tsp Baking powder
  • 1/4 tsp Salt

Cream Cheese Frosting

  • 300 g Cream cheese (full fat) e.g., Philadelphia
  • 100 g Mascarpone (full fat) (41%+)
  • 50 g Powdered sugar Sifted

Instructions

Cookie Preparation

  • Preheat the oven to 350°F and line a baking tray with parchment paper.
  • In a large bowl, cream butter and sugar until light and fluffy. Add vanilla extract and egg, mix well.
  • Gently fold in Greek yogurt. Sift in flour, baking powder, and salt. Mix until just combined.
  • Drop spoonfuls of cookie dough onto the prepared baking tray. Bake for about 12 minutes or until lightly golden.

Cream Cheese Frosting

  • Whip the cream cheese, mascarpone, and powdered sugar until fluffy and pipeable.
  • Transfer the frosting to a piping bag and frost the cooled cookies. Decorate with sprinkles.

Notes

For a tangier flavor, add a touch of lemon zest to the cookie dough. Ensure the cookies are completely cooled before frosting.
