  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas

Instructions

Cooking the Beef

  • In a skillet over medium heat, brown the ground beef until fully cooked.
  • Drain the excess grease, then add the taco seasoning and 1/4 cup of water.
  • Let it simmer for about 5 minutes, allowing the flavors to meld beautifully.

Prepare the Tortillas

  • Warm the tortillas on a dry skillet for a few moments or heat them briefly in the microwave.

Assembling the Burrito

  • Lay a tortilla flat on a surface.
  • Layer with a scoop of rice, seasoned beef, nacho cheese sauce, chipotle sauce, and sour cream.
  • Finish by sprinkling shredded cheddar and mozzarella cheeses on top.

Grilling the Burrito

  • Heat a clean skillet over medium heat and sprinkle about 2 tablespoons of shredded cheese on the skillet.
  • Place the burrito seam-side down into the skillet, allowing it to cook until the cheese melts and creates a crispy crust.
  • Flip and repeat on the other side.

Notes

Serve your Grilled Cheese Burrito hot and fresh. A side of salsa or guacamole enhances the flavor, and garnish with green onions or cilantro as desired. Leftovers can be stored in the fridge for up to three days or frozen for up to two months.
