  • 1 lb ground beef
  • 2 tablespoons homemade taco seasoning
  • 2 cups Spanish rice
  • 1/2 cup pico de gallo
  • 1/2 cup refried beans
  • 1/2 cup guacamole
  • 16 oz shredded Mexican cheese blend

  • 2 tablespoons olive oil

How to Make Grilled Stuffed Burrito

  • For each burrito, layer as follows: spread refried beans, Spanish rice, taco meat, guacamole, pico de gallo, and cheese.
  • To fold the burrito, bring up the sides, then fold the edge closest to you outward. Continue to fold and roll.
  • Grill the burrito in a hot cast iron skillet coated with olive oil for 3-4 minutes on each side until golden brown.

Notes

Use a toothpick to secure the ends of the burrito while grilling to prevent it from opening up.
