Chop the onion and mince the garlic.
Cooking
In a large skillet over medium heat, sauté the onion in olive oil until translucent (about 5 minutes).
Add the ground beef to the skillet and season with salt and pepper. Cook until browned (6-8 minutes).
Stir in minced garlic and canned tomatoes; simmer for 2-3 minutes.
Add orzo and beef broth; bring to a boil then reduce heat to simmer for 10-12 minutes.
Stir in fresh spinach and Italian seasoning until spinach wilts (about 1 minute).
Notes
Can be served directly from the skillet or plated elegantly. Top with grated Parmesan cheese or fresh herbs. Store leftovers properly for up to 3-4 days in the fridge or freeze for up to 2 months.
