Ingredients

For the foil packets

  • 1 cup BBQ sauce
  • 1 can pineapple chunks Fresh pineapple can also be used.
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • Chicken (amount based on preference) Chicken Use your preferred amount.

Instructions

Preparation

  • Preheat the grill to medium heat.
  • In a bowl, combine the BBQ sauce, pineapple chunks, red and yellow bell peppers, and sliced red onion.
  • Cut the chicken into pieces and mix it with the BBQ mixture until everything is well coated.

Cooking

  • Place the chicken and vegetable mixture onto a large piece of foil, then fold it into a tightly sealed packet.
  • Cook on the grill for 20-25 minutes or until the chicken is cooked through.
  • Carefully open the foil packets, taking care to avoid the hot steam, and serve hot.

Notes

Serve with fluffy rice, a light salad, or grilled corn on the cob. Drizzle extra BBQ sauce on top for added flavor. For extra taste, marinate the chicken in BBQ sauce before cooking. Feel free to add extra vegetables like zucchini or mushrooms.
