Ingredients

For the batter

  • 1 cup almond flour Use superfine almond flour for the best texture
  • 1/4 cup coconut sugar Plus extra for rolling, or substitute with erythritol for sugar-free
  • 1/2 teaspoon ground cinnamon Plus extra for rolling, if desired
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce Can use mashed banana as an alternative
  • 1 teaspoon vanilla extract

For air frying

  • as needed cooking spray or light oil For greasing the air fryer basket

Instructions

Preparation

  • In a medium bowl, whisk together almond flour, coconut sugar, ground cinnamon, baking powder, and salt.
  • Add the applesauce and vanilla. Stir until a soft, slightly sticky dough forms. If it’s crumbly, add a teaspoon of applesauce at a time.
  • Pinch off small portions and shape into 1-inch balls or short logs.

Cooking

  • Preheat your air fryer to 350°F (175°C). Lightly spray the basket with cooking spray or rub with a little oil.
  • Arrange the bites in a single layer so they don’t touch; work in batches if needed.
  • Air-fry for 8–10 minutes, checking at 8 minutes — they should be golden and set.
  • Remove and let cool for a few minutes so they firm up.
  • Optional: while slightly warm, roll the bites in a mix of extra coconut sugar and cinnamon.

Notes

Store cooled churro bites in an airtight container at room temperature for up to 2 days. For longer storage, freeze in a single layer, then transfer to a freezer bag for up to 1 month. To reheat, pop frozen or refrigerated bites into the air fryer at 325°F (160°C) for 3–5 minutes.
