Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Stir in the melted coconut oil, followed by the sugar, beaten egg, and vanilla extract.
Sprinkle the baking soda and salt over the mixture, stirring to combine well.
Add the whole wheat flour (and protein powder, if using) and mix until just incorporated; be careful not to over-mix.
Pour the batter into the greased loaf pan.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
