Ingredients

Base Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1/2 cup bell peppers, diced
  • 1 tsp Italian seasoning (optional) Can be omitted if desired.
  • 1/4 tsp red pepper flakes (optional) Adjust for spice preference.
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 lb boneless skinless chicken breasts
  • 6 cups reduced-sodium chicken broth

Vegetables

  • 1 cup broccoli florets
  • 1 cup cauliflower florets

Finishing Touch

  • 2 tbsp lemon juice

Instructions

Preparation

  • Heat olive oil in a Dutch oven over medium-high heat.
  • Add onion, garlic, and ginger. Sauté for 3–4 minutes until fragrant and translucent.
  • Stir in bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper. Cook for another 3 minutes.
  • Add chicken breasts and chicken broth. Simmer for 20 minutes.
  • Remove chicken, shred with two forks, and return it to the pot.

Cooking

  • Add broccoli and cauliflower florets. Simmer for another 10 minutes until vegetables are tender.

Serving

  • Remove from heat and stir in lemon juice before serving.

Notes

For serving, ladle generous portions into bowls, garnishing with fresh herbs like parsley or cilantro. Serve with whole-grain bread or a side salad for a complete meal. Customize the veggies as per your preference or what is available.
