Preparation
Line a 9x13 baking dish with parchment paper and coat it with oil. Set aside.
In a medium pot, bring the honey and 3/4 cup of water to a boil over medium-high heat. Once boiling, reduce the heat to medium.
Using a candy thermometer, cook the mixture until it reaches a temperature of 242-245 degrees (the firm ball stage).
While the honey mixture heats, add the remaining 1/2 cup of water and gelatin to the bowl of a stand mixer. Stir to combine and allow it to bloom.
Mixing
Once the honey mixture reaches the desired temperature, remove from heat. With the mixer on low, carefully pour the hot honey into the bowl of the stand mixer.
Turn the mixer to medium-high speed and beat for about 5 minutes.
Add salt and vanilla extract, then beat on high speed for an additional 5 minutes or until glossy and almost white.
Using a spatula coated with coconut oil or butter, quickly spread the mixture into the prepared dish.
Setting
Let it sit uncovered for 6-8 hours or overnight to set.
After setting, turn the marshmallow out onto a prep surface and cut into 1.5-inch squares.
In a small bowl, mix cornstarch and powdered sugar together.
Toss the marshmallow pieces in the powdered sugar mixture to coat all sides and prevent sticking.
Store in an airtight container with an extra sprinkle of powdered sugar for freshness.
