carrots, diced

celery, diced

zucchini, diced

Instructions
Cooking
In a large pot, heat a little oil over medium heat. Add the onion and garlic, sautéing until fragrant.
Add the carrots and celery, cooking until softened.
Stir in the zucchini and bell pepper, cooking for another 3-4 minutes.
Add the rinsed quinoa, vegetable broth, diced tomatoes, thyme, and oregano.
Bring to a boil, then reduce the heat and let simmer for about 20 minutes, or until the quinoa is cooked and the vegetables are tender.
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley.
Notes
This soup can be served as a main course or side dish. Pairs well with whole-grain bread or salad. For extra flavor, add lemon juice or chili flakes.
