  • 1 cup quinoa, rinsed
  • 4 cups vegetable broth Can substitute with chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions

  • In a large pot, heat a little oil over medium heat. Add the onion and garlic, sautéing until fragrant.
  • Add the carrots and celery, cooking until softened.
  • Stir in the zucchini and bell pepper, cooking for another 3-4 minutes.
  • Add the rinsed quinoa, vegetable broth, diced tomatoes, thyme, and oregano.
  • Bring to a boil, then reduce the heat and let simmer for about 20 minutes, or until the quinoa is cooked and the vegetables are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

This soup can be served as a main course or side dish. Pairs well with whole-grain bread or salad. For extra flavor, add lemon juice or chili flakes.
