Ingredients

Chicken and Filling

  • 4 pieces chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix together ricotta cheese, spinach, Parmesan cheese, garlic, oregano, basil, salt, and pepper.
  • Place a chicken breast on a cutting board and gently pound it to an even thickness.
  • Spread a portion of the ricotta mixture onto the chicken breast, then roll it up tightly.
  • Secure with toothpicks if necessary.

Cooking

  • Heat olive oil in a skillet over medium heat. Sear the chicken rolls until golden brown on all sides.
  • Transfer the chicken rolls to a baking dish and bake for 25-30 minutes, until cooked through.

Notes

Leftover Herbed Ricotta Stuffed Chicken Rolls can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until heated through.
