Ingredients

Main Ingredients

  • 150 g halloumi cheese (sliced)
  • 1/2 cup cooked green lentils
  • 1/2 roasted carrot, sliced
  • 1 cup spinach or baby greens
  • 1 tbsp toasted pine nuts

Vinaigrette

  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp chopped fresh herbs (thyme or parsley)

Additional Seasoning

  • lemon zest
  • pepper

Instructions

Cooking Halloumi

  • Start by pan-frying the halloumi slices in a dry nonstick pan until they turn a lovely golden brown, about 2 minutes per side.

Roasting Carrots

  • Toss the sliced carrots in olive oil and roast them in the oven at 200°C (400°F) until caramelized, which should take approximately 20 minutes.

Preparing Vinaigrette

  • Mix the cooked green lentils with a refreshing lemon-herb vinaigrette made from lemon juice, olive oil, Dijon mustard, and chopped fresh herbs.

Assembling the Bowl

  • Plate the bowl with the roasted carrots, vibrant greens, and crispy halloumi.
  • Finish by sprinkling the toasted pine nuts on top for a beautiful presentation.

Notes

The Herby Halloumi & Lentil Bowl can be served warm or at room temperature. Add toppings like avocado or roasted chickpeas for crunch. Substitute halloumi with grilled tofu for a vegan option. Store leftovers in an airtight container for up to 2 days, keeping halloumi separate.
