  • 2 pieces ripe bananas, mashed Make sure they're very ripe for natural sweetness.
  • 1 cup blueberries Fresh or frozen, gently fold in to avoid breaking.
  • 1 cup Greek yogurt Can be substituted with plant-based yogurt for a vegan option.
  • 2 cups oats Use certified gluten-free oats if needed.
  • 1/4 cup honey or maple syrup Choose based on dietary preferences.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional) Adds flavor, omit if desired.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease a baking dish to prevent sticking.
  • In a large bowl, combine the mashed bananas, Greek yogurt, honey or maple syrup, vanilla extract, and cinnamon. Mix well until smooth.
  • Stir in the oats, baking powder, and salt until fully combined, creating a cohesive mixture.
  • Gently fold in the blueberries, taking care not to break them.
  • Pour the mixture into the greased baking dish and smooth the top for even baking.

Baking

  • Bake in the preheated oven for 25-30 minutes or until golden brown on top.
  • Allow to cool slightly before slicing. Serve warm and enjoy!

Notes

Top with a dollop of Greek yogurt and a drizzle of honey for extra creaminess. Can be stored in an airtight container in the fridge for up to 5 days. To reheat, microwave or bake at 350°F until warmed through.
