Instructions
Preparation
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, mix together the cottage cheese, milk, eggs, and vanilla extract until smooth.
In another bowl, combine the oat flour, baking powder, baking soda, salt, and sugar.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Gently fold in the blueberries.
Divide the batter evenly among the muffin cups.
Baking
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool for a few minutes before transferring to a wire rack.
Notes
These muffins are perfect on their own or paired with Greek yogurt or honey. They can be enjoyed warm, chilled, or toasted.
