Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray.
In a blender, combine the cottage cheese, eggs, and egg whites. Blend until completely smooth.
Pour the blended mixture into a large bowl. Add the Kodiak mix and stir until just combined. Let the batter rest for about 5 minutes to thicken slightly.
Cooking
Scoop approximately 3/4 cup of batter into the preheated waffle iron and cook until golden brown and set, typically about 5 minutes.
