  • 2 3/4 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 2 cups low-fat cottage cheese
  • 2 large eggs
  • 1 3/4 cups liquid egg whites

Instructions

Preparation

  • Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray.
  • In a blender, combine the cottage cheese, eggs, and egg whites. Blend until completely smooth.
  • Pour the blended mixture into a large bowl. Add the Kodiak mix and stir until just combined. Let the batter rest for about 5 minutes to thicken slightly.

Cooking

  • Scoop approximately 3/4 cup of batter into the preheated waffle iron and cook until golden brown and set, typically about 5 minutes.
  • Serve immediately, or allow them to cool completely before storing in an airtight container.

Notes

Store the waffles in the fridge for up to 4-5 days or freeze for longer storage. To reheat, place them in the oven at 350° F until warmed through and slightly crisp (about 5-15 minutes).
