High Protein Pancakes

Ingredients

Pancake Batter

  • 1 cup oats
  • 1 scoop protein powder Any flavor of your choice.
  • 2 ripe bananas ripe bananas
  • 2 pieces eggs
  • 1/2 cup milk (or almond milk) Can substitute with preferred milk.
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • 1 tablespoon honey (optional) For sweetness.
  • Cooking spray or oil for the pan

Instructions

Preparation

  • In a blender, combine oats, protein powder, bananas, eggs, milk, baking powder, vanilla extract, salt, and honey until smooth.
  • Heat a non-stick skillet over medium heat and spray with cooking spray, or lightly oil the pan.

Cooking

  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook for 2-3 minutes on each side, or until golden brown and cooked through.

Serving

  • Serve warm and enjoy, or store in the fridge or freezer for meal prep.

Notes

Store pancakes in an airtight container in the refrigerator for up to five days or freeze them for longer storage. Reheat in a toaster or microwave for a quick breakfast option.
