Instructions

Cooking the Hash

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced sweet potatoes and cook for about 10 minutes, or until they begin to soften.
  • Stir in the chopped bell pepper and onion, cooking until the onion becomes translucent.
  • Add the spinach and cook until it wilts.
  • Create wells in the mixture and crack the eggs into them. Cover and cook until the eggs reach your desired doneness.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with avocado, hot sauce, or herbs if desired.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to three days. Reheat gently in the microwave or on the stovetop. For freezing, consider omitting the eggs and adding them fresh upon reheating to maintain texture.
