  • 2 large sweet potatoes Choose firm sweet potatoes, free of blemishes.
  • 1/4 cup hot honey Adjust according to spice preference.
  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa Prepare according to package instructions.
  • 1 avocado, sliced
  • 1/4 cup Greek yogurt Can substitute with a dairy-free alternative.
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet and roast for about 45 minutes, or until tender.
  • While the sweet potatoes are baking, prepare the quinoa according to package instructions.
  • In a saucepan, warm the black beans over medium heat and season with salt and pepper.

Assembly

  • Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  • Cut the sweet potatoes in half lengthwise and fluff the insides with a fork.
  • Top each sweet potato half with cooked quinoa, black beans, hot honey, sliced avocado, and a dollop of Greek yogurt.
  • Garnish with chopped green onions and serve warm.

Notes

These bowls can be enjoyed as a standalone meal or paired with a side salad or steamed vegetables. Consider adding extra hot honey for an extra kick.
