sweet potatoes
Choose firm sweet potatoes, free of blemishes.

hot honey
Adjust according to spice preference.

black beans, drained and rinsed

Prepare according to package instructions.

Instructions
Preparation
Preheat your oven to 425°F (220°C).
Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet and roast for about 45 minutes, or until tender.
While the sweet potatoes are baking, prepare the quinoa according to package instructions.
In a saucepan, warm the black beans over medium heat and season with salt and pepper.
Assembly
Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
Cut the sweet potatoes in half lengthwise and fluff the insides with a fork.
Top each sweet potato half with cooked quinoa, black beans, hot honey, sliced avocado, and a dollop of Greek yogurt.
Garnish with chopped green onions and serve warm.
Notes
These bowls can be enjoyed as a standalone meal or paired with a side salad or steamed vegetables. Consider adding extra hot honey for an extra kick.
