Hobo Casserole

Ingredients

  • 1 pound ground beef You can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 medium potatoes, thinly sliced Ensure slices are thin for even cooking.
  • 1 can cream of mushroom soup (10.5 ounces) Can be substituted with cream of chicken or homemade white sauce.
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese Feel free to use mozzarella or gouda for variation.
  • ½ teaspoon paprika (optional) Add for extra flavor.
  • 1 tablespoon butter, melted

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a greased baking dish, layer the ground beef, chopped onion, garlic powder, onion powder, salt, and black pepper.
  • Layer the thinly sliced potatoes on top.
  • Mix the cream of mushroom soup with the milk until smooth and pour over the potatoes.
  • Sprinkle the cheddar cheese on top, drizzle with melted butter, and add paprika if desired.

Baking

  • Cover with foil and bake for about 1 hour.
  • Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.

Serving

  • Serve hot, ideally with a side salad or steamed vegetables.

Notes

To store, let it cool completely, place in an airtight container, and refrigerate for up to 3 days. It can also be frozen for up to 2 months. Reheat in the oven or microwave when ready to eat. Consider adding jalapeños for spice or other veggies like bell peppers or carrots.
