  • 1 cup rice
  • 1 cup BBQ sauce
  • 1/2 cup honey
  • 1 onion, diced
  • 2 cups chicken broth

Instructions

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced onion and cook until translucent.
  • Add the diced chicken breast and season with salt and pepper; cook until browned.
  • Stir in the rice until coated.
  • Mix together BBQ sauce and honey, then pour over the mixture in the skillet.
  • Add chicken broth and bring to a boil.
  • Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
  • Serve hot.

Notes

Garnish with diced green onions or fresh cilantro for added flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
