Ingredients

For the Marinade and Salmon

  • 4 fillets Salmon fillets Any fresh salmon fillet works well.
  • 1/4 cup Honey Adjust based on sweetness preference.
  • 2 cloves Garlic, minced Fresh garlic preferred for best flavor.
  • 1/4 cup Soy sauce Use low-sodium if desired.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black pepper Freshly ground for more flavor.

For Serving

  • 2 cups Rice (white or brown) Cook according to package instructions.
  • 2 cups Mixed vegetables (bell peppers, broccoli, carrots) Feel free to use any available vegetables.
  • 2 tbsp Olive oil For cooking the salmon and vegetables.
  • 2 stalks Green onions, chopped For garnish.

Instructions

Preparation

  • Whisk together honey, minced garlic, soy sauce, salt, and pepper in a small bowl.
  • Marinate the salmon fillets in the honey garlic mixture for about 15-20 minutes.
  • Cook the rice according to the package instructions while the salmon is marinating.

Cooking

  • Heat olive oil in a pan over medium heat once the rice is cooking.
  • Add the marinated salmon fillets to the pan and cook for about 4-5 minutes on each side, or until they are cooked through.
  • In the same pan, add the mixed vegetables and sauté until they are tender.

Assembly

  • To assemble your bowls, place a scoop of rice, top it with salmon and sautéed vegetables.
  • Drizzle any remaining glaze over the bowl and garnish with chopped green onions.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove or in the microwave until heated through. For longer storage, you can freeze the salmon and vegetables separately.
