Ingredients

For the Marinade

  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup pineapple juice
  • 1/4 cup ketchup
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1/4 teaspoon black pepper

For the Chicken and Garnish

  • 4 pieces chicken thighs
  • 4 pieces chicken drumsticks
  • 1 cup chopped fresh pineapple for garnish
  • 2 pieces green onions sliced for garnish

Instructions

Preparation

  • In a large bowl, whisk together the soy sauce, brown sugar, pineapple juice, ketchup, ginger, garlic, and black pepper to create the marinade.
  • Add the chicken to the marinade, cover, and refrigerate for at least 2 hours or overnight for best results.

Grilling

  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade, allowing excess marinade to drip off.
  • Grill the chicken for about 30-35 minutes, turning occasionally and basting with the reserved marinade until the chicken is cooked through and has nice grill marks.
  • Remove from the grill and let the chicken rest for a few minutes.

Serving

  • Garnish with chopped pineapple and sliced green onions before serving.

Notes

For added flavor, consider marinating the chicken overnight. If you prefer a spicier kick, add some red pepper flakes or sriracha to the marinade. Don’t skip allowing the chicken to rest after grilling—it helps to retain moisture.
