Instructions
Preparation of Crepe Batter
In a mixing bowl, combine the milk, flour, powdered sugar, and salt, mixing thoroughly until the batter is smooth.
Add the eggs one at a time, ensuring each is well incorporated into the batter.
Set the batter aside to rest for about 30 minutes.
Preparation of Filling
In a separate bowl, combine cottage cheese, sour cream, powdered sugar, raisins, lemon zest, lemon juice, and vanilla powder.
Cooking the Crepes
Heat a non-stick skillet over medium heat, using a ladle to pour a thin layer of batter to create your crepe.
Allow it to cook until it's lightly golden, flipping to cook the other side.
Once cooked, take each crepe and spread a layer of the cottage cheese filling, then roll or fold them as desired.
Serving
Serve warm, garnished with a sprinkle of powdered sugar or a scoop of sour cream.
