Ingredients

Crepe Batter

  • 600 ml milk
  • 200 g flour
  • 2 tbsp powdered sugar
  • 1 pinch salt
  • 4 pieces eggs

Cottage Cheese Filling

  • 500 g cottage cheese
  • 50 g powdered sugar
  • 50 g raisins
  • 0.5 pieces lemon zest (optional)
  • 1 tsp lemon juice (optional)
  • 1 tsp vanilla powder (optional)
  • Sour cream to taste

Instructions

Preparation of Crepe Batter

  • In a mixing bowl, combine the milk, flour, powdered sugar, and salt, mixing thoroughly until the batter is smooth.
  • Add the eggs one at a time, ensuring each is well incorporated into the batter.
  • Set the batter aside to rest for about 30 minutes.

Preparation of Filling

  • In a separate bowl, combine cottage cheese, sour cream, powdered sugar, raisins, lemon zest, lemon juice, and vanilla powder.

Cooking the Crepes

  • Heat a non-stick skillet over medium heat, using a ladle to pour a thin layer of batter to create your crepe.
  • Allow it to cook until it's lightly golden, flipping to cook the other side.
  • Once cooked, take each crepe and spread a layer of the cottage cheese filling, then roll or fold them as desired.

Serving

  • Serve warm, garnished with a sprinkle of powdered sugar or a scoop of sour cream.

Notes

These crepes can be stored in the refrigerator for up to three days or frozen for longer storage.
