Ingredients
  

Dry Ingredients

  • 1 ½ cups whole wheat flour
  • 1 ½ cups all-purpose flour
  • 1 cup old-fashioned oats plus 2 tbsp for topping
  • 1/2 cup oat bran
  • 1/2 cup mixed seeds (e.g., sunflower, pumpkin)
  • 4 tbsp granulated sugar
  • 1 tsp salt
  • 1 ½ tsp baking soda

Wet Ingredients

  • 2 eggs
  • 1 ½ cups buttermilk

Instructions
 

  • Preheat oven to 350°F and grease a loaf pan. Dust with whole wheat flour.
  • Combine all dry ingredients in a bowl, except the oats for topping.
  • In a separate bowl, mix eggs and buttermilk, then add to dry ingredients.
  • Combine wet and dry ingredients until just mixed. Pour into loaf pan, top with oats, and bake for 1 hour.
