Ingredients

For the pie filling

  • 1 n/a pre-made pie crust any standard pre-made pie crust
  • 1 cup strong brewed coffee, cooled Ensure coffee is brewed strong for best flavor
  • 1/2 cup Irish whiskey Can substitute with smooth bourbon or leave out for non-alcoholic version
  • 1 cup heavy cream Whipped until stiff peaks form
  • 1/2 cup sugar Divided into halves for two different steps
  • 3 n/a egg yolks Large eggs recommended
  • 1 tablespoon gelatin Use unflavored gelatin for thickening
  • 2 tablespoons cold water For dissolving gelatin
  • to taste n/a Chocolate shavings For garnish

Instructions

Preparation

  • In a bowl, mix the coffee, whiskey, and half of the sugar.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • In a saucepan, combine the egg yolks, remaining sugar, and the coffee-whiskey mixture. Cook over low heat until slightly thickened.
  • Dissolve gelatin in cold water and add to the mixture, stirring until smooth.
  • Fold the whipped cream gently into the mixture.
  • Pour the filling into the pie crust.

Setting

  • Refrigerate until set, about 4 hours.

Serving

  • Garnish with chocolate shavings before serving.

Notes

Store any leftover pie in the refrigerator, tightly covered. Best enjoyed within 48 hours for optimal texture. For variations, consider adding cinnamon or nutmeg to the coffee mixture or using a chocolate pie crust.
