Irresistible Apple Cobbler

Ingredients

For the Apple Filling

  • 6 medium medium baking apples, peeled and sliced 1/4 inch thick Granny Smith, Golden Delicious, etc.
  • 1 cup water or apple juice
  • 1/3 cup packed brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/8 tsp salt

For the Topping

  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 5 tbsp melted butter
  • Ground cinnamon, for sprinkling

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, combine the sliced apples, water or apple juice, brown sugar, cornstarch, lemon juice, vanilla extract, cinnamon, nutmeg, and salt. Cook over medium heat until the apples are slightly soft, stirring occasionally, about 5-7 minutes.
  • In a separate bowl, whisk together the flour, white sugar, baking powder, and salt. Gradually add in the milk and melted butter, stirring until just combined. Do not overmix.

Assembly

  • Pour the apple mixture into a greased baking dish, spreading it evenly.
  • Pour the batter over the apples, without spreading it out; it will naturally distribute during baking.
  • Sprinkle a light dusting of ground cinnamon over the top.

Baking

  • Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

Serving

  • Serve warm, optionally with a scoop of vanilla ice cream.

Notes

To store, allow to cool completely before covering with plastic wrap or aluminum foil. Can be stored in the refrigerator for up to 3-4 days, or frozen in an airtight container for up to 3 months.
