6mediummedium baking apples, peeled and sliced 1/4 inch thickGranny Smith, Golden Delicious, etc.
1cupwater or apple juice
1/3cuppacked brown sugar
1tbspcornstarch
1tbsplemon juice
1/2tspvanilla extract
1tspground cinnamon
1/2tspground nutmeg
1/8tspsalt
For the Topping
1cupall-purpose flour
1cupwhite sugar
2tspbaking powder
1/4tspsalt
3/4cupmilk
5tbspmelted butter
Ground cinnamon, for sprinkling
Instructions
Preparation
Preheat your oven to 350°F (175°C).
In a saucepan, combine the sliced apples, water or apple juice, brown sugar, cornstarch, lemon juice, vanilla extract, cinnamon, nutmeg, and salt. Cook over medium heat until the apples are slightly soft, stirring occasionally, about 5-7 minutes.
In a separate bowl, whisk together the flour, white sugar, baking powder, and salt. Gradually add in the milk and melted butter, stirring until just combined. Do not overmix.
Assembly
Pour the apple mixture into a greased baking dish, spreading it evenly.
Pour the batter over the apples, without spreading it out; it will naturally distribute during baking.
Sprinkle a light dusting of ground cinnamon over the top.
Baking
Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Serving
Serve warm, optionally with a scoop of vanilla ice cream.
Notes
To store, allow to cool completely before covering with plastic wrap or aluminum foil. Can be stored in the refrigerator for up to 3-4 days, or frozen in an airtight container for up to 3 months.
