Italian Grandmother's Custard Tart

Ingredients

For the crust

  • 2 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 cup unsalted butter, cold and cubed Ensure the butter is cold for a flaky crust.
  • Zest of 1 lemon
  • Pinch salt

For the custard filling

  • 2 large eggs Can substitute with flaxseed meal or chia seeds for a vegan option.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the flour and sugar.
  • Add the cubed butter and mix until the mixture resembles crumbs.
  • Stir in the lemon zest, eggs, and a pinch of salt until the dough forms.
  • Roll out the dough on a floured surface and gently place it in a tart pan.
  • Blind bake the crust for 15-20 minutes, until lightly golden.

Baking

  • Prepare the custard filling and pour it into the golden crust.
  • Bake for an additional 30 minutes or until the custard is set and slightly golden on top.
  • Let it cool before serving.

Notes

Dust with powdered sugar or serve with whipped cream, fresh berries, or a sprig of mint. Store covered in the refrigerator for up to 5 days or freeze individual slices for up to 2 months. Thaw in the refrigerator overnight before serving.
