2 1/2cupsall-purpose flour
3/4cupgranulated sugar
1cupunsalted butter, cold and cubedEnsure the butter is cold for a flaky crust.

Preparation
Preheat the oven to 350°F (175°C).
In a bowl, combine the flour and sugar.
Add the cubed butter and mix until the mixture resembles crumbs.
Stir in the lemon zest, eggs, and a pinch of salt until the dough forms.
Roll out the dough on a floured surface and gently place it in a tart pan.
Blind bake the crust for 15-20 minutes, until lightly golden.
Baking
Prepare the custard filling and pour it into the golden crust.
Bake for an additional 30 minutes or until the custard is set and slightly golden on top.
