Instructions
Preparation
In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery; sauté until softened.
Remove the casing from the Italian sausage and add it to the pot, breaking it up with a spoon as it cooks until browned.
Add chicken broth and bring to a boil. Add ditalini pasta and cook according to package instructions.
Stir in Parmesan cheese, herbs, and season with salt and pepper to taste.
Serve hot, garnished with additional Parmesan if desired.
Notes
Can be served with crusty bread or a fresh green salad. Consider garnishing with extra Parmesan cheese and fresh herbs for added flavor.
