  • 1 lbs Italian sausage Choose sweet or spicy according to preference.
  • 1 cup Parmesan cheese Grated, for garnish.
  • 1 cup Ditalini pasta Can substitute with any small pasta shape.
  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
  • 2 medium Carrots Diced.
  • 2 stalks Celery Diced.
  • 6 cups Chicken broth Or vegetable broth for a vegetarian version.
  • 1 tsp Thyme Dried.
  • 1 tsp Oregano Dried.
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive oil For sautéing.

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery; sauté until softened.
  • Remove the casing from the Italian sausage and add it to the pot, breaking it up with a spoon as it cooks until browned.
  • Add chicken broth and bring to a boil. Add ditalini pasta and cook according to package instructions.
  • Stir in Parmesan cheese, herbs, and season with salt and pepper to taste.
  • Serve hot, garnished with additional Parmesan if desired.

Notes

Can be served with crusty bread or a fresh green salad. Consider garnishing with extra Parmesan cheese and fresh herbs for added flavor.
