  • 2 pieces sweet potatoes, peeled and cut into rounds
  • 5 tbsp olive oil
  • 1 tsp paprika
  • 4 cloves garlic, pressed
  • 2 tsp chili powder
  • 1/4 cup brown sugar
  • 2 tbsp jerk seasoning
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cut the sweet potatoes into about 1/2-inch-sized rounds and remove the brown skin.
  • In a large bowl, mix together the olive oil, brown sugar, jerk seasoning, paprika, chili powder, and a pinch of salt and pepper.
  • Stir until well combined, then add in the sweet potato rounds and coat them evenly with the mixture.
  • Place the sweet potato rounds on the prepared baking sheet.

Cooking

  • Bake for 35 to 40 minutes, or until they are fully cooked and delicious.

Notes

Ensure even cooking by cutting the sweet potatoes into uniform sizes. For an extra kick, add more jerk seasoning or fresh chilies to the mixture. You can experiment with different spices such as cumin or coriander to customize the flavor profile. If you have leftovers, store them in an airtight container in the refrigerator for 3 to 5 days. Reheat in the oven at a low temperature or microwave.
