Ingredients

Dry Ingredients

  • 1 cup Kodiak Cakes protein pancake mix
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 2 pieces ripe bananas, mashed Ensure they are very ripe for the sweetest flavor.
  • 1/2 cup Greek yogurt
  • 2 pieces eggs
  • 1/4 cup honey or maple syrup Maple syrup can be used as a substitute for honey.
  • 1 teaspoon vanilla extract

Optional Add-ins

  • chocolate chips or nuts Fold in a few if desired for extra flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a mixing bowl, mash the bananas until smooth.
  • Add Greek yogurt, eggs, honey (or maple syrup), and vanilla extract, mixing until well combined.
  • In another bowl, combine the Kodiak pancake mix, baking soda, baking powder, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. If desired, fold in chocolate chips or nuts.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the loaf to cool before slicing.

Notes

Store in an airtight container at room temperature for about 3-4 days or slice and freeze individual pieces wrapped well for up to 3 months.
