Korean Chicken Stir-Fry with Gochujang Sauce

Main Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces Choose skinless for a healthier option.
  • 1 tbsp vegetable oil or sesame oil For cooking the chicken.
  • 1 medium onion, sliced
  • 2-3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1/4 cup roasted peanuts (optional) For garnish.
  • 2 tbsp Gochujang (Korean red chili paste) Adjust to taste for spice level.
  • 1 tbsp soy sauce Use gluten-free for a gluten-free version.
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar For sweetness.
  • 1 tbsp sesame oil For added flavor.
  • 1 tsp sesame seeds (optional) For garnish.
  • as needed cooked rice or noodles For serving.

Instructions

Preparation

  • In a small bowl, combine the Gochujang, soy sauce, rice vinegar, honey, sesame oil, and sesame seeds (if using). Stir until well combined and smooth. Set aside.

Cooking

  • Heat 1 tablespoon of vegetable oil or sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook for 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add a bit more oil if needed. Add the sliced onion and red bell pepper. Stir-fry for 3-4 minutes, or until the veggies are tender but still crisp. Add the minced garlic and grated ginger, and stir-fry for another minute until fragrant.
  • Return the cooked chicken to the skillet with the veggies. Pour the Gochujang sauce over the chicken and vegetables, tossing everything together until well-coated and heated through. Allow the sauce to simmer for 2-3 minutes, letting it thicken and become sticky.

Serving

  • Serve the Korean Chicken Stir-Fry over steamed rice or noodles. Garnish with chopped green onions and roasted peanuts for added crunch and flavor.

Notes

Feel free to swap in your favorite vegetables. Broccoli, carrots, and snap peas work beautifully in this dish. If you like it spicier, consider adding Sriracha or red pepper flakes. This dish can be made ahead of time for an easy meal prep option. Just reheat and serve!
