Ingredients

  • 2 large cucumbers
  • 1 tablespoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon chili flakes optional
  • 2 stalks green onions, chopped
  • sesame seeds for garnish

Instructions

Preparation

  • Slice the cucumbers into thin rounds and place them in a bowl.
  • Sprinkle salt over the cucumbers and let them sit for about 15 minutes to draw out water.
  • Rinse the cucumbers and drain the excess water.

Dressing

  • In a separate bowl, mix together the rice vinegar, sugar, sesame oil, and optional chili flakes.
  • Pour the dressing over the cucumbers and toss to combine.
  • Add the chopped green onions and toss again.
  • Garnish with sesame seeds before serving.

Notes

For an extra crunch, consider adding thinly sliced carrots. Use a mandoline slicer for uniform cucumber slices. Adjust sweetness or acidity of the dressing to personal taste.
