Lazy Day Lemon Cream Pie Bars

Ingredients

For the crust

  • 1.5 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tablespoons sugar

For the filling

  • 8 oz cream cheese, softened Make sure it's at room temperature for easy blending.
  • 1 cup powdered sugar Adjust sweetness to taste.
  • 1/2 cup fresh lemon juice Fresh is recommended for best flavor.
  • Zest of 1 lemon For additional flavor.
  • 1 cup whipped cream Fold gently into the mixture.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until fully mixed.
  • Press the mixture firmly into the bottom of a greased 9×9-inch baking dish to form the crust.
  • Bake for 8-10 minutes or until lightly golden. Allow to cool.

Filling

  • In another bowl, beat the softened cream cheese until smooth.
  • Gradually add powdered sugar, lemon juice, and lemon zest, mixing until well combined.
  • Fold in the whipped cream gently until fully incorporated.
  • Spread the cream layer evenly over the cooled crust.
  • Chill in the refrigerator for at least 2 hours before slicing into bars.

Notes

Best served chilled. Garnish with lemon zest or fresh berries. Store leftovers in an airtight container in the refrigerator for up to 4-5 days.
