A simplified and delicious version of classic pecan pie, these bars feature a buttery crust and gooey pecan filling, perfect for satisfying your sweet tooth without the fuss.

Ingredients

For the crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter (softened) Ensure butter is softened for better blending
  • 0.25 cup granulated sugar Can be substituted with brown sugar if desired
  • 0.25 tsp salt

For the pecan filling

  • 2 large eggs
  • 1 cup light brown sugar (packed) Richer flavor can be achieved by using dark brown sugar
  • 0.25 cup unsalted butter (melted) Melted for easier mixing
  • 0.25 cup corn syrup (light or dark)
  • 1 tsp vanilla extract
  • 1.5 cups pecan halves (or chopped pecans) Can toast the pecans for added flavor

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper or lightly grease it.
  • In a mixing bowl, combine the flour, softened butter, granulated sugar, and salt. Mix until the dough comes together.
  • Press the dough evenly into the bottom of the prepared baking dish to form the crust.
  • Bake the crust in the preheated oven for about 10-12 minutes until lightly golden.

Filling

  • In another bowl, whisk together the eggs, brown sugar, melted butter, corn syrup, and vanilla extract until smooth.
  • Stir in the pecans.
  • Once the crust is done, pour the pecan filling over the crust and spread it evenly.
  • Bake for an additional 25-30 minutes, until the filling is set and the top is golden brown.
  • Allow the bars to cool completely in the pan on a wire rack before cutting into squares.

Notes

Serve bars with whipped cream, ice cream, or chocolate sauce. Store leftovers in an airtight container in the refrigerator for up to one week or freeze for three months.
