Ingredients
  

Crust

  • cups all-purpose flour
  • cup granulated sugar
  • teaspoons cornstarch
  • ¼ teaspoon salt
  • 10 tablespoons unsalted butter (very cold, cut into small cubes)
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Lemon Curd

  • 2 large whole eggs
  • 4 large egg yolks
  • ½ cup fresh lemon juice
  • 1 cup granulated sugar
  • teaspoon salt
  • ½ cup unsalted butter (cut into pieces)
  • Powdered sugar for dusting

Instructions
 

Lemon Curd

  • Combine eggs, egg yolks, lemon juice, sugar, and salt in a saucepan. Cook over medium/low heat, stirring constantly until thickened.
  • Strain the mixture into a bowl and set aside.
  • Pour the lemon curd over the baked crust and bake again until set.
  • Cool the bars to room temperature, then chill in the fridge. Dust with powdered sugar and cut into squares before serving.

Notes

For a stronger lemon flavor, add some lemon zest to the lemon curd mixture.
