Ingredients
Crust
1½cupsall-purpose flour
⅓cupgranulated sugar
1½teaspoonscornstarch
¼teaspoonsalt
10tablespoonsunsalted butter (very cold, cut into small cubes)
1large egg yolk
½teaspoonvanilla extract
Lemon Curd
2large whole eggs
4large egg yolks
½cupfresh lemon juice
1cupgranulated sugar
⅛teaspoonsalt
½cupunsalted butter (cut into pieces)
Powdered sugar for dusting
Instructions
Lemon Curd
Combine eggs, egg yolks, lemon juice, sugar, and salt in a saucepan. Cook over medium/low heat, stirring constantly until thickened.
Strain the mixture into a bowl and set aside.
Pour the lemon curd over the baked crust and bake again until set.
Cool the bars to room temperature, then chill in the fridge. Dust with powdered sugar and cut into squares before serving.
Notes
For a stronger lemon flavor, add some lemon zest to the lemon curd mixture.
