Ingredients
  

  • 1 package cream cheese (8 oz/250g package, softened)
  • 1/2 cup powdered sugar
  • 8 oz Cool Whip (thawed)
  • 1 lemon (juiced)
  • 1/4 tsp lemon extract (optional)
  • 3 cups mini marshmallows
  • 18 oz fresh blueberries
  • lemon zest (for topping, optional)
  • sliced almonds (for topping, optional)

Instructions
 

  • Add cream cheese and powdered sugar to a large mixing bowl. Beat together with a hand mixer on medium-high speed until smooth.
  • Fold in the Cool Whip, lemon juice, and lemon extract.
  • Gently fold in the blueberries and mini marshmallows until just combined.
  • Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes to 1 hour.
  • Right before serving, garnish with sliced almonds and lemon zest, if desired.
