Ingredients

For the Base

  • 1 cup unsalted butter, softened Ensure it's softened to room temperature.
  • 1 cup granulated sugar
  • 2 cups all-purpose flour Don't overmix the batter once flour is added.
  • 1 package cream cheese, softened Ensure it's softened to room temperature.
  • 1 large egg
  • 1 lemon Fresh lemon zest and juice from one juicy lemon Fresh lemon juice and zest will give the best flavor; avoid bottled lemon juice.
  • Powdered sugar for finishing touch Dust on top before serving.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  • In a large bowl, cream together the softened butter and granulated sugar until smooth.
  • Add the softened cream cheese and egg, mixing until well combined.
  • Gradually stir in the flour, lemon zest, and lemon juice until the mixture is smooth.
  • Pour the batter into the prepared baking pan and spread evenly.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until lightly golden and a toothpick inserted into the center comes out clean.
  • Allow to cool completely in the pan before cutting into bars.
  • Dust with powdered sugar before serving.
