Ingredients

For the Shrimp and Bowls

  • 6-8 large large shrimp, peeled and deveined Use fresh shrimp for the best flavor.
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • 0.5 tsp lemon juice More can be added for extra flavor if desired.
  • 0.5 cup cooked brown rice Can substitute with quinoa or cauliflower rice.
  • 0.5 cup steamed broccoli Feel free to add more veggies.
  • 0.25 whole avocado, sliced
  • 0.25 cup cherry tomatoes, halved
  • Fresh cilantro for garnish
  • Salt & pepper, to taste

Instructions

Preparation

  • Rinse 1/4 cup of brown rice and cook it in 1/2 cup of water until tender (about 25-30 minutes). Set aside.
  • Season the shrimp with salt, pepper, garlic, olive oil, and lemon juice.
  • Heat a skillet over medium heat and cook the shrimp for 2-3 minutes per side until pink and opaque.
  • Steam the broccoli until tender. Slice the avocado and cherry tomatoes.

Assembly

  • Start with brown rice as the base. Arrange the cooked shrimp, broccoli, avocado, and cherry tomatoes on top.
  • Garnish with fresh cilantro. Drizzle with extra lemon juice and enjoy this light and refreshing meal!

Notes

Store leftovers in separate airtight containers to maintain texture. Best consumed within 2 days. Warm leftovers gently to avoid overcooking shrimp.
