Ingredients

For the Crust and Topping

  • 1 cup rolled oats Old-fashioned oats work best
  • 1 cup all-purpose flour Can be substituted with gluten-free flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar Can be adjusted for sweetness
  • 1/2 cup butter, softened Ensure butter is softened for easier mixing
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Lemon Filling

  • Zest of 1 lemon Increase for a stronger lemon flavor
  • 1/2 cup lemon juice
  • 2 tablespoons cornstarch

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  • In a bowl, combine oats, flour, brown sugar, granulated sugar, baking powder, and salt. Mix in the softened butter until crumbly.
  • Press half of this mixture into the bottom of the baking dish to form the crust.
  • In another bowl, mix together lemon juice, cornstarch, and lemon zest until well combined. Pour this lemon mixture over the crust.
  • Crumble the remaining oat mixture on top of the lemon layer.

Baking

  • Bake for 30-35 minutes until the top is golden brown.
  • Allow to cool before cutting into bars and serving.

Notes

Serve warm or at room temperature. For extra enjoyment, serve with whipped cream or ice cream. Store in an airtight container at room temperature for up to 3 days; refrigerate for up to a week or freeze for up to 3 months.
