Ingredients

For the fries

  • 1 bag Frozen French fries Any brand/shape, shoestring, crinkle, or steak fries all work.

For the toppings

  • 6-8 slices Bacon Cook until crisp; turkey bacon can be used as a substitute.
  • 1-2 cups Cheddar cheese, shredded Sharp cheddar for punch; Monterey Jack or pepper jack for melt and spice.
  • 2-3 stalks Green onions, thinly sliced For freshness and color.
  • Favorite sauces Optional - ketchup, ranch, sriracha mayo, BBQ sauce, or jalapeño crema.

Instructions

Preparation

  • Preheat the oven and bake fries. Spread the frozen fries in a single layer on a baking sheet and bake according to the package directions until golden and crisp, usually 20-30 minutes at around 400-450°F. Turn once for even crisping.
  • While the fries bake, cook the bacon in a skillet over medium heat until very crisp, or bake it on another sheet at 400°F for 12–18 minutes. Drain on paper towels then crumble.

Assembling

  • When the fries are done, remove the sheet from the oven. Sprinkle the crumbled bacon evenly across the fries, then add shredded cheddar on top.
  • Return the sheet to the oven for 5–7 minutes, or until the cheese is fully melted and bubbly. Keep an eye so it doesn’t over-brown.
  • Remove from the oven. Scatter sliced green onions over the top and drizzle with your favorite sauces. Serve immediately while hot and melty.

Notes

For extra gooiness, mix shredded cheddar with a little mozzarella. For a vegetarian version, use smoky tempeh bacon or crispy roasted chickpeas. If your fries are thick-cut, add a few extra minutes to the initial bake.
