Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain any excess fat.
Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes, allowing the flavors to meld together.
Layering and Baking
In a greased baking dish, layer half of the tortilla chips. Spread half of the beef mixture over the chips.
Sprinkle half of the shredded cheddar cheese over the beef mixture, followed by half of the diced tomatoes.
Repeat the layering process with the remaining tortilla chips, beef mixture, cheese, and diced tomatoes.
If desired, top with sliced jalapeños.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and serve hot, garnished with sour cream and chopped green onions.
Notes
Use leftover taco meat to save time. Adjust spice levels by omitting jalapeños or using mild salsa. Add chopped bell peppers or fresh cilantro for extra nutrition.
