  • 1 lb carrots, peeled and cut into sticks or left whole if small Fresh, crisp carrots yield the best flavor and texture.
  • 2 tablespoons olive oil
  • 1.5 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried thyme or 1 teaspoon fresh thyme
  • 0.25 teaspoon red pepper flakes (optional) Add for heat.

  • to taste Crumbled feta or goat cheese For garnish; can substitute with nutritional yeast for a dairy-free option.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
  • Peel large carrots and cut into even-sized sticks or leave baby carrots whole.
  • In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, black pepper, thyme, and red pepper flakes (if using).
  • Place carrots in a mixing bowl and pour the maple Dijon glaze over them. Toss well to coat.

Cooking

  • Spread coated carrots in a single layer on the prepared baking sheet.
  • Bake for 20-25 minutes, flipping halfway through, until tender and caramelized.
  • For deeper color, roast for an additional 5 minutes.

Serving

  • Remove carrots from the oven and transfer to a serving dish.
  • Garnish with chopped parsley, crumbled cheese, or toasted nuts before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. Fresh is best for optimal texture and flavor.
