Preparation
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
Peel and cut large carrots into even-sized sticks. Baby carrots can be left whole.
Make the Glaze
In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, black pepper, thyme, and red pepper flakes (if using).
Coat and Roast
Place the carrots in a large bowl, pour the glaze over them, and toss to coat.
Spread the coated carrots in a single layer on the prepared baking sheet.
Roast for 20-25 minutes, flipping halfway through. For a deeper color, roast an additional 5 minutes.
Garnish and Serve
Remove from oven and transfer to a serving dish. Garnish with parsley, cheese, or nuts.
