  • 1 lb carrots, peeled and cut into sticks or left whole if small
  • 2 tablespoons olive oil
  • 1.5 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried thyme or 1 teaspoon fresh thyme
  • 0.25 teaspoon red pepper flakes (optional, for heat)
  • Chopped fresh parsley For garnish
  • Crumbled feta or goat cheese For garnish
  • Toasted nuts (walnuts, pecans, or almonds) For garnish

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
  • Peel and cut large carrots into even-sized sticks. Baby carrots can be left whole.

Make the Glaze

  • In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, black pepper, thyme, and red pepper flakes (if using).

Coat and Roast

  • Place the carrots in a large bowl, pour the glaze over them, and toss to coat.
  • Spread the coated carrots in a single layer on the prepared baking sheet.
  • Roast for 20-25 minutes, flipping halfway through. For a deeper color, roast an additional 5 minutes.

Garnish and Serve

  • Remove from oven and transfer to a serving dish. Garnish with parsley, cheese, or nuts.
  • Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven for best texture.
