Ingredients

For the Blondies

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter (melted)
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup diced apples (about 1 medium apple)

For the Maple Glaze

  • 1/2 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • 1/4 teaspoon vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9×9-inch square baking pan with parchment paper or grease it.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon, then set it aside.
  • In a separate large bowl, whisk together the melted butter and brown sugar until smooth.
  • Add the eggs and vanilla extract to the butter-sugar mixture, whisking until well combined.
  • Slowly mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  • Gently fold in the diced apples using a spatula.

Baking

  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • While the blondies are baking, whisk together the powdered sugar, maple syrup, melted butter, and vanilla until smooth to prepare the glaze.
  • Once baked, allow the blondies to cool for 10 minutes before drizzling the glaze over the top.
  • Slice into squares and enjoy!

Notes

For an added touch, serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Sprinkle crushed nuts on top for added crunch.
