Instructions
Preparation
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
Stir in the minced garlic, carrot, and celery, cooking for about 3-4 minutes until softened.
Add the diced chicken breast to the pot, seasoning with salt and pepper. Cook until the chicken is browned on all sides.
Pour in the chicken broth and can of diced tomatoes, then stir in Italian seasoning. Allow this mixture to come to a gentle simmer.
Add the chopped kale to the pot, cooking for an additional 5-7 minutes until the kale is wilted.
Lower the heat and stir in the heavy cream, allowing the soup to warm through.
Taste and adjust seasoning if necessary.
Serving
Serve hot, garnished with grated Parmesan cheese and fresh basil.
Notes
This soup stores well; refrigerate in an airtight container for up to 3 days or freeze for up to 3 months. Reheat gently before serving.
