Ingredients

Sandwich Ingredients

  • 8 Artisan bread rolls (like ciabatta or torta)
  • 3 tablespoons butter
  • 8 slices cheese (cheddar, provolone, or Swiss)
  • 1 cup baby spinach leaves
  • 1 recipe cooked leftover Meatloaf, sliced at least 1 inch thick
  • 1/2 cup ketchup
  • 6 tablespoons light brown sugar
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon ground nutmeg

Instructions

  • Turn the oven to high broil.
  • Prepare the meatloaf sauce by mixing together the ketchup, light brown sugar, Dijon mustard, and ground nutmeg.
  • Butter both insides of the bread roll and place in the oven to toast. Remove from the oven when the edges begin to get golden.
  • Spread a generous layer of meatloaf sauce over the bottom half of the bread roll. Top with a slice of meatloaf and a slice of cheese. Return to the oven until the cheese is melted.
  • Add a handful of spinach and place the top layer of bread. Serve with extra sauce for dipping, if desired.
