8Artisan bread rolls (like ciabatta or torta)
3tablespoonsbutter
8slicescheese (cheddar, provolone, or Swiss)
1cupbaby spinach leaves
1recipecooked leftover Meatloaf, sliced at least 1 inch thick
1/2cupketchup
6tablespoonslight brown sugar
2teaspoonsDijon mustard
1/4teaspoonground nutmeg
Instructions
Turn the oven to high broil.
Prepare the meatloaf sauce by mixing together the ketchup, light brown sugar, Dijon mustard, and ground nutmeg.
Butter both insides of the bread roll and place in the oven to toast. Remove from the oven when the edges begin to get golden.
Spread a generous layer of meatloaf sauce over the bottom half of the bread roll. Top with a slice of meatloaf and a slice of cheese. Return to the oven until the cheese is melted.
