  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 bell pepper, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions

Preparation

  • In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, bell pepper, olives, feta, and parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  • Drizzle the dressing over the salad and gently toss everything together, making sure all the ingredients are nicely coated.
  • Allow the salad to rest for at least 15 minutes so the flavors can meld together.
