  • 2 medium tomatoes Diced.
  • 3 cups spinach Fresh, chopped.
  • 1 teaspoon Mediterranean spices (oregano, cumin, paprika) Adjust to taste.

Instructions

Cooking

  • Cook the rice according to package instructions.
  • Sauté chopped onion and garlic in olive oil until softened.
  • Add diced tomatoes and cook until they break down.
  • Stir in beans and spinach, cooking until the spinach wilts.
  • Season with Mediterranean spices and mix with the cooked rice.
