Ingredients

For the Soup

  • 1 lb sausage (Italian or your choice)
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup pasta (small shapes like ditalini or elbow)
  • 2 cups kale or spinach, chopped
  • 1 can kidney beans, drained and rinsed
  • Salt and pepper to taste
  • Olive oil for cooking
  • Parmesan cheese for serving (optional)

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat. Add sausage and cook until browned.
  • Add onion, carrots, celery, and garlic; sauté until vegetables are tender.
  • Pour in vegetable broth and add diced tomatoes. Bring to a simmer.

Cooking

  • Add pasta and cook until al dente.
  • Stir in kale or spinach and kidney beans, season with salt and pepper.
  • Serve hot, garnished with Parmesan cheese if desired.

Notes

Use seasonal vegetables for a fresh taste. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
